Virgin Voyages Rolls Out Refreshed Menus Across Ships and Bimini Beach Club
Virgin Voyages refreshes menus at The Wake and The Dock now, with Rashida Holmes' Caribbean lineup debuting at Beach Club at Bimini from October 16, 2026 across four ships.

Itinerary
- New Beach Club at Bimini menu rolls out beginning October 16, 2026.
- Refreshed menus at The Wake and The Dock are available now across the fleet.
- Michelin-starred chef Brad Farmerie updated The Wake; chef Rashida Holmes replaces the Bimini menu.
- Bimini rollout: Resilient Lady mid-October, Scarlet Lady late October, Brilliant Lady mid-November 2026, Valiant Lady April 2027.
- Two vegan and gluten-free options offered at The Wake at brunch and dinner.
Virgin Voyages is refreshing menus at two onboard restaurants and will replace the full menu at its Beach Club at Bimini starting October 16, 2026 — a fleet-wide culinary update led by chef Levi Mezick, senior director of culinary program development, the cruise line announced in a press release.
The refreshed menus at The Wake and The Dock are available now across the fleet. The Bimini rollout is staggered by ship: mid-October 2026 on the Resilient Lady, late October on the Scarlet Lady, mid-November on the Brilliant Lady, and April 2027 when the Valiant Lady returns to Bimini.
What changes at The Wake?
The Wake, Virgin Voyages' steakhouse concept, gets refreshed brunch and dinner menus developed with Michelin-starred chef Brad Farmerie, who helped shape the original menu and is returning to evolve it.
The brunch menu now includes a Waldorf Salad, Russet Sweet Potato Hash and a Portobello Mushroom Benedict. Dinner selections, which vary by ship, add Chilled Corn Soup and Leek & Potato Soup, while the Clam Chowder stays a dinner exclusive alongside Pan Roasted Salmon, Grilled Swordfish and Caramelized Sea Scallops.
New additions include:
- Tuna Tartare on select ships
- Bacon-Wrapped Twice-Baked Potatoes fleet-wide
- Oysters Rockefeller as a "Treat Yourself" paid option
- Two vegan and gluten-free options at both brunch and dinner
- Additional specials on voyages longer than seven nights
The Wake's update expands seafood and seasonal range rather than a full rewrite, with extras on longer sailings.
What's new at The Dock?
The Dock introduces a fresh lineup of Mediterranean-inspired shareable dishes:
- Jeweled Tabbouleh, Sautéed Eggplant and Trumpet Royale Mushrooms
- Red Lentil Dip, Turkish Deviled Eggs and Kebbeh
- Pork Souvlaki and Beef Kafta Skewers from the grill
- Swordfish, Yellowfin Tuna and Poached Shrimp as seafood options
Guests on the Resilient Lady also get a Plum Pita Tart as a dessert option. The Dock's refresh positions the venue more clearly around shared-plates Mediterranean dining.
Who is behind the Bimini menu?
Chef Rashida Holmes, founder of Bridgetown Roti in Los Angeles, will replace the original Beach Club at Bimini menu with a lineup rooted in Bahamian and Caribbean flavors: curry-filled roti, snapper patties and tamarind BBQ skewers made for sharing.
"I'm excited to partner with Virgin Voyages. It was important to me that Sailors can experience the joy of the Caribbean at the Beach Club at Bimini. Giving them a taste of what I grew up eating – taught to me by my parents and aunties – is how I express that joy," Holmes said.
She tied several dishes directly to family recipes. "The curry chicken roti, a staple at our flagship Bridgetown Roti in Los Angeles, is an ode to my mother's recipe, which she learned growing up in Barbados," Holmes said, adding that the mac and cheese is "a legendary Holmes' holiday staple."
Why does the timing matter?
The staggered rollout runs roughly seven months, from mid-October 2026 to April 2027, tied to each ship's return to Bimini. The Wake and The Dock changes are already live fleet-wide, so the remaining variable is the Bimini schedule — guests on the Valiant Lady wait until spring 2027 for the new Beach Club menu.
